Tighten all way then back it out one turn. Loosen it until it begins to slip, then tighten up till it does not slip excessively

When you're holding the shaft attached to the spur gear, attempt to turn the spur gear by hand. It should take a solid grip and a fair amount of wrist-power to get it to slip. Makes you appreciate the torque generated by these motors.

How do you guys adjust the slipper clutch on the Beetle. I'm having a hard time getting it right since it's so hard to tell when it slips enough and when not.

Its trial and error. Listen for it slipping when you take off. The less slip noise there is, the more wear you'll get in your spur gear and drive train. You will know when it slips too much as you're acceleration will be less than ideal.
