can i hook up two 2700 mah 2S1P / 2 Cell / 7.4V
lipos in parallel and use a ICELITE 50 max for a 25V

Yes,that'll work. Just make sure you do wire them in parallel,not in series,or else you'll see a lot of smoke escape from your electronics *)

well I searched it and its a ESC If you wired two 2sell packs in parallel all your doing is increasing the capacity not the voltage, If you want 4 sell VOLTAGE then you must wired them in series and YES you absolutely can wired them in series every time. I use two 7s packs wired in SERIES to make 14 s power for my hangar 9 beast If you want 6s power then youl need either three 2s packs in series or two 3s packs in series or just use one 6s pack

Holding up nicely so far, I'm recharging ~2500mAh after each full cycle. Make sure to check the dimensions, this pack is surprisingly flat at 10mm but quite large.
